Gluten Free Oatmeal Date Cookie

Gluten Free Oatmeal & Date Cookies | Bulu Box - sample superior vitamins and supplements

This De-Licious Oatmeal Date Cookie is not only clean, gluten free, no refined sugar or butter used and tastes every bit like Grandma’s famous baked cookies! :)


  • 1/4 cup Coconut Oil (try Kelapo Coconut Oil)
  • 1 cup Coconut Sugar
  • 1/4 cup Pure Maple Syrup
  • 1 egg
  • 3 Tbs. 100% Liquid Egg Whites
  • 2 tsp. Pure Vanilla
  • 1 1/2 cups Gluten Free Flour (I make my own mix and it contains xanthan gum)
  • 3/4 tsp, Xanthan Gum, if it is not already in your flour blend
  • 1 1/4 tsp. Baking Soda
  • 2 cups Gluten Free Rolled Oats
  • 12 dates, chopped or snipped (could use raisins or chocolate chips, as well)


Preheat oven to 350’F. In a large bowl, combine sugar, maple syrup and coconut oil and beat until combined (It won’t get creamy like butter and sugar does). Add the egg, egg whites, vanilla and baking soda. Mix well. Stir in flour, xanthan gum (if using), rolled oats and date pieces. Place tablespoon full of dough on a cookie sheet about 2 inches apart (I didn’t grease the cookie sheets and they came off just fine). Lightly dampen your hands, or the bottom of a glass, and press down the cookie dough (it will not spread, so press them down to the thickness you want them to be). Bake 8-10 minutes until lightly brown around the edges.
